Email scanned document pdf

What I am needing to know what controls where incoming files get filed which I scan them to my lap top and to which folder they go into. I would like them all to go into Scanned Document folder just needing guidance how and where to I make these changes as currently the are going into a very obscure folder. I would like to inform that, if you are using the Scan app to scan the documents then by default those files will be saved under My Documents in File Explorer.
